This recipe was so easy and absolutely delicious! It is even non-vegan eaters approved. The cookies were surprisingly really soft and chewy and would be perfect with a glass of vanilla almond milk or tea.

When putting the cookies on the cookie sheet tray, just remember to flatten out the cookie batter into a ‘cookie shape’ because their shape doesn’t change much while baking


•2 cups flour
•1 1/3 cups rolled oats
•1t baking soda
•3/4t salt
•1t cin
•1/2t nutmeg

•1 2/3 c sugar
•2/3 c canola oil
•2 T molasses
•1 cup canned pumpkin
•1 t vanilla
•1 T ground flax seeds

I recommend adding extra oats and even try adding raising or nuts to the recipe

•Preheat oven to 350 grease baking sheets

•Mix flour oats baking soda salt and spices

•In another bowl mix sugar oil molasses pumpkin vanilla and flax seeds until well combined. Add dry ingredients to wet in 3 batches folding in to combine

•Bake for 16 min at 350
